Having been gluten free for a couple of years now, I have to admit I still crave pasta. A big dish of pasta, topped with tomato sauce and Parmesan cheese just screams comfort food. Yeah, you can buy gluten free pasta, but they’re usually high in carbs, not good if you’re on a low carb diet.

At some point I read about using vegetable noodles as a replacement for pasta. I tried it and was ecstatic about the idea of eating spaghetti and meatballs again. I did it the old fashioned way, though, using a vegetable peeler.
